Sufganiyot Recipe

Sufganiyot are traditional Jewish jelly-filled doughnuts, beloved especially during Hanukkah. These deep-fried treats are golden brown on the outside with a soft, fluffy interior, filled with sweet jam and dusted with powdered sugar.   1. Combine the water and yeast in a small bowl and let sit until foamy.
  2. In a large bowl, combine flour, sugar, salt, and nutmeg.
  3. Add egg yolks, oil, and vanilla to the water/yeast mixture and whisk until combined.
  4. Add the liquid mixture to the flour mixture and stir until it is knead-able.
  5. Knead the dough for 5 minutes, then place in a large bowl, cover and allow to rise for 1-2 hours.
  6. Knead dough and cut in half, then roll it out.
  7. Use a cookie cutter or cup to cut circles into the dough.
  8. Fill pan or fryer with oil and heat to 350F.
  9. Cook the pieces of dough for approximately 3 minutes, flipping halfway through frying.
  10. Remove from pan and dust with powdered sugar and fill with filling.
